Description

This low-carb Hello Fresh Tex Mex Paste is a smoky, bold, and deeply flavorful sauce made with chipotle, tomatoes, and spices—perfect for tacos, soups, and more. Ready in just 10 minutes!


Ingredients

2 tablespoons olive oil

1 large white onion (8 oz), sliced

3 to 5 chipotle peppers in adobo sauce – use 3 for mild spice, 5 for spicier flavor

2 tablespoons chipotle sauce

7 ounces fire-roasted tomatoes – canned or homemade

¼ cup tomato paste

2 tablespoons minced garlic – or 5 large cloves, finely chopped

¼ cup vegetable broth

Spices & Seasonings:

½ teaspoon allspice

1 teaspoon ground coriander

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon dried oregano

2 teaspoons unsweetened cocoa powder

1 teaspoon salt

2 tablespoons coconut sugar (or 1½ tbsp monk fruit)


Instructions

Sauté the Onion

1. In a medium saucepan, heat 2 tablespoons of olive oil over medium-low heat.

2. Add the sliced white onion and sauté until soft and translucent, about 5 minutes. Do not let the onions brown.

 

Incorporate the Remaining Ingredients

1. Once the onions are softened, add:

• Chipotle peppers in adobo sauce

• Chipotle sauce

• Fire-roasted tomatoes

• Tomato paste

• Minced garlic

• Vegetable broth

2. Stir to combine and let the mixture simmer gently for 3–5 minutes.

 

Add the Spices & Simmer

1. Add the following spices:

• Allspice

• Ground coriander

• Ground cumin

• Paprika

• Garlic powder

• Dried oregano

• Cocoa powder

• Salt

• Coconut sugar (or monk fruit)

2. Stir well and continue to simmer for an additional 3 minutes, allowing flavors to blend.

 

Blend the Paste

1. Remove from heat and let the mixture cool for a few minutes.

2. Blend until smooth using an immersion blender or food processor.

3. Add a splash of broth to adjust texture if needed.

 

Store & Use as Needed

1. Transfer the paste to a clean, airtight container.

2. Refrigerate for up to 10 days or freeze in cubes for up to 3 months.

3. Use 1 to 2 tablespoons per serving as a flavor base.
